The History: How the American Pistachios Were Born

It was in 1930 when an American botanist, called William E. Whitehouse, traveled to Persia (modern-day Iran) and brought pistachio seeds from Persia to California. Since the growing conditions of pistachios were ideal in California, the cultivation of American pistachios began. As the pistachio seeds were brought from the Rafsanjan region in Kerman province, Mr.Whitehouse decided to name the first pistachio tree “Kerman.” It almost took a decade for William to be able to harvest what he had planted. But, the result was a success for a country where had never seen such a health nut before.

Everyone in the world knows Iranian pistachios as one of the best nuts in the world. However, American pistachios producers also claim their pistachios are different. One serving of American pistachios has only 160 calories, fewer calories, and fats that most of the nuts contain. Moreover, pistachios are rich in protein. However, as Iranian pistachios are grown in better condition and more naturally, they have more capability for roasting. Iranian pistachios have higher unsaturated fat and can be roasted to 180 degrees. The high temperature not only makes this nut tastier but also eliminates any live bacteria some raw nuts contain. The amount of unsaturated fats is lower in American pistachios. Therefore, they can’t be roasted at the high temperature that Iranian pistachios can. Thus, they miss this advantage.

Due to the high-end technologies and modern cultivation, American pistachios are commonly in good condition. The harvesting of pistachios sometimes impacts the quality of the product. In some countries, the pistachios are bleached or dyed to hide the shells discoloration that occurs during the process of drying on the ground, which can give them an acidic taste. Like Iranian pistachios, American pistachios are not colored. They are naturally in perfect and tanned shells with a buttery, sweet taste.
