Green Peeled Pistachio Kernel

Green peeled pistachio kernels are meticulously processed from Kaal kernels after losing their outer skins. The result is small, vibrant green kernels. The color may vary across a spectrum from uniform yellow to dark green. Different grades include S, A, B, C, D, and E. The letter S represents “Super” to connote superior quality. The cause of the green color is a natural pigment called “Chlorophyll.” The more chlorophyll in the kernel, the darker the color.

Normal Pistachio Kernel

Normal pistachio kernels are harvested at full maturity. They are simply shelled pistachios. There are four major groups of regular kernels named after the pistachio types they are made from. For example, there is an Iranian pistachio type called “Akbari.” The kernel from Akbari pistachio is called “Akbari kernel.” Likewise, the kernel obtained from the Ahmad Aghaei pistachio is called the “Ahmad Aghaei kernel.”
