A green peeled pistachio kernel is the meat or the edible portion of an unripe pistachio nut after the hull, the shell, and skins have been removed. For this purpose, closed-shell pistachios are carefully chosen from trees when they are still unripe (also known as Kaal, early-picked, or Boz). They are then shelled, skinned, and sorted accurately in a hygienic site under strict quality control to obtain natural-green-colored kernel.
