Saffron Uses

Historically, this spice is known for its wide range of applications that spans foods, drinks, and traditional herbal medicine.

Some of the applications of saffron by category are:

• Recipes: A few strands of this edible gold give a heavenly fragrance to all types of dishes (such as Persian Rice, paella, and bouillabaisse). Just soak a small amount in a few drops of warm water and add it to the cooked rice. You may use the resulting extract for your desserts (cake batter, make ice cream, or saffron rice pudding) and drinks (saffron tea).  Additionally, you can use this delicious, luxurious ingredient as a food coloring supplement in soups and stews.
• Beverages and Cocktails: The red gold is appreciated for its fragrance and color in Lemonade, Martini, etc. Its rich hue recalls the yellow-golden color that only the spice itself can impart.

How is Saffron Produced?

Saffron is the crimson thread-like structure (botanically called stigma and styles) of a plant commonly known as Saffron Crocus. Crimson means “a rich deep red color.” This rich deep red color, along with a labor-intensive harvesting method, makes Saffron the most expensive spice (by weight) in the world. It has also gotten Saffron the nickname “the red Gold” to imply its high price. 

The Red Gold is well-known across the globe for its coloring strength and aroma. Sadly, some countries that can not compete against the Red Gold resort to adulterants or counterfeiting, but only to see that the demand for genuine Saffron has increased. 

It requires a combination of many factors (such as soil, water, skilled workers, and suitable climate) to produce top-quality Saffron. The growing condition affects the quality attributes of Saffron, as it requires cool temperatures and full sunlight to yield fine quality stigmas (threads). When harvest begins, farmers get to their farms to handpick saffron stigma and styles (threads) from saffron flowers. The threads are then dried in the most efficient way possible. 

Naturally dried stigmas (threads) are distinguished by their bitter taste, hay-like fragrance, and slight metallic notes.

• Negin: category 1 in ISO 3632 classification; long, unbroken stigma only; ironed flat; prime quality(coloring strength 260- 280); all-red
•  Sargol: category 1 in ISO 3632 classification; upper tips of stigma, top quality(coloring strength 230- 250), all-red
• Poshal: category 2 in ISO 3632 classification; red stigmas plus some yellow style (coloring strength 210-230)
