How is Green Peeled Pistachio Kernel (GPPK) produced?A green peeled pistachio kernel is the meat or the edible portion of an unripe pistachio nut after the hull, the shell, and skins have been removed. For this purpose, closed-shell pistachios are carefully chosen from trees when they are still unripe (also known as Kaal, early-picked, or Boz). They are then shelled, skinned, and sorted accurately in a hygienic site under strict quality control to obtain natural-green-colored kernel. Green Peeled Pistachio Kernel is classified into seven grades (A, B, C, D, E, F, and G) based on physical characteristics such as color density, with grade A having the darkest green color grade G being the lightest, yellowish-green.
